This summer time traybake is incredibly light and gently sweet. The buttermilk adds depth of flavour and gives a smooth sponge texture, enhanced by bright pink raspberries dolloped in just before baking. I love baking this traybake, watching the vibrant raspberries against the pale sponge mixture reminds me summer has arrived!

Partners well with earl grey tea and if your feeling naughty a dash of single cream.
