As the cake is baking the sweet zesty smell of warm lime reminds me of long warm summers walking in the countryside. Fresh & fragrant.

Inspired by my love of Indian cooking, this traybake is definitely one of my favourites and offers an alternative to your cake occasion.

Partners well with freshly brewed filter coffee served with cream or a refreshing green tea.
